解凍方式
1.午仔魚烹煮前一天由冷凍放置冷藏，慢慢降溫。
2.自然沖水解凍，解凍後就可煎、蒸、煮。
烹調重點
1.煎煮，少油、中火，下鍋前可抹些許鹽巴。
2.炊蒸，把薑、蔥切絲或加入破布子一起蒸，可增加風味。
